Ingredients:
2 boneless, skinless chicken breasts
1/2 cup dill pickle juice
1/2 cup milk
1/4 cup water
1 egg
1 cup all-purpose flour
1 tablespoon powdered sugar
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
Peanut oil, for frying
4 hamburger buns
Dill pickle slices
Butter, for buns
Instructions
Directions:
Pound the chicken breasts to an even thickness and cut them in half.
Marinate the chicken pieces in dill pickle juice for at least 30 minutes.
In a bowl, whisk together milk, water, and egg. In a separate bowl, combine flour, powdered sugar, and spices.
Dredge each piece of chicken in the flour mixture, then dip in the milk mixture, and coat again in the flour mixture.
Heat peanut oil in a skillet to 350°F (175°C). Fry the chicken for 3-4 minutes on each side, until golden and cooked through.
Butter the hamburger buns and toast them in a separate pan.
Assemble the sandwich by placing the fried chicken on the bun, topped with dill pickle slices. Serve immediately.
