Norwegian Butter Cookies: A Delicious Tradition Perfect for Any Occasion

1 cup (225g) unsalted butter, softened
1 cup (200g) granulated sugar
1 egg
1 teaspoon vanilla extract
2 ½ cups (320g) all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
Colored sprinkles or coarse sugar (optional, for decorating)


Instructions


Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Roll the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each ball slightly with the bottom of a glass or your hand. Decorate with colored sprinkles or coarse sugar if desired.
Bake for 12-15 minutes, or until the edges are lightly golden.
Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
